Recipe for Malaga ice cream<\/h2>\n

300 ml of milk
\n100 gr. of brown sugar and 50 gr. of honey
\n400 ml of whipping cream
\n200 ml of Malaga sweet wine
\n100 grams of seedless raisins
\n6 egg yolks<\/p>\n

Preparation with cooking robot<\/strong><\/p>\n

  • Soak the raisins in the sweet wine for about 1 hour. Mix the yolks, milk and sugar at 90\u00ba with speed 4.<\/li>\n
  • Once the temperature has dropped, mix with the raisins and wine.<\/li>\n
  • Place the cream in a clean jug at room temperature.<\/li>\n
  • Mix the whipped cream with the cold egg yolk cream.<\/li>\n
  • Store the resulting mixture in the freezer for a couple of hours.<\/li>\n
  • Remove every hour from the freezer to stir the mixture, this will prevent ice crystals from forming.<\/li>\n
  • Remove from freezer 15 minutes before serving.<\/li>\n<\/ul>\n
